I can’t remember the exact moment that I first met Brandi Childers Romines, but it was way back in the day at Cumberland Elementary School.

It may have been in Mrs. Barbara Trent’s spelling class or Mrs. Shirley Cope’s reading class. Brandi was tough, had a strong throwing arm and didn’t take anything from anybody. All of those descriptions were meant in the very best way, that was just my eight year old take on things at the time.

Fast forward to the present. Brandi is now a good wife and mother and owner of Happy As A Lark Cake Creations in Lexington. I used the word unique in the title of this article to describe how she brilliantly combines her love for all things Kentucky Wildcats with her mastery of creating her cakes.

I could have easily substituted unique and replaced it with creative or talented. Or I could use all of these words and more simultaneously. This isn’t the first time Brandi has put her talent on display for all to see. After Kentucky defeated Kansas to bring home national championship No. 8 she made a cake that was a spitting image of the trophy itself.

The Sweet Sixteen is upon us and Big Blue Nation and America is captivated by it as always. Kentucky has found their elusive groove and is playing their best basketball of the season. I’m not saying Brandi doesn’t bring her A-game all throughout the year but she, like the Cats, always has a little something extra special in the month of March.
